A quick look behind the curtain, however, suggests no real historical or cultural link between the pink tequila-and-grapefruit cocktail and the month itself\u2014making the \u2018celebration\u2019 feel more like a well-timed marketing invention than an established tradition.<\/p>\n<p>Which is curious, given that <a href=\"https:\/\/elitetraveler.com\/finest-dining\/wines-and-spirits\/tequila-in-mexico\" target=\"_blank\" rel=\"noreferrer noopener\">tequila<\/a> and its associated cocktails hardly need any help. According to consumer data recently reported by <a href=\"https:\/\/www.theguardian.com\/business\/2026\/apr\/21\/tequila-gin-uk-favourite-warm-weather-spirit\" target=\"_blank\" rel=\"noreferrer noopener\"><em>The Guardian<\/em><\/a>, the agave-based spirit has now overtaken gin as the <a href=\"https:\/\/elitetraveler.com\/finest-dining\/wines-and-spirits\/tequila-most-popular-uk-spirit\" target=\"_blank\" rel=\"noreferrer noopener\">UK\u2019s bestselling spirit<\/a>, and is set to be the pour of the summer.<\/p>\n<p>The Paloma cocktail (Spanish for \u2018dove\u2019) is typically made with tequila, lime juice, and grapefruit soda, served over ice with a lime wedge and, sometimes, a salt rim. Some bars swap the soda for fresh grapefruit juice, topping the drink with club soda instead.<\/p>\n<p>For at-home mixing, there are plenty of good grapefruit sodas on the market. For a more traditional Mexican-style serve, <a href=\"https:\/\/www.amazon.co.uk\/Jarritos-Soda-Grapefruit\/dp\/B00GACFPU2\" target=\"_blank\" rel=\"noreferrer noopener\">Jarritos Toronja<\/a> \u2013 now widely available in London \u2013 remains something of a benchmark, with its sugar cane sweetness pairing particularly well with tequila blanco.<\/p>\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/elitetraveler.com\/wp-content\/uploads\/sites\/8\/2026\/05\/best-paloma-cafe-london-1-2393x2560.jpg\" alt=\"best paloma london\" class=\"wp-image-260976\" \/><figcaption class=\"wp-element-caption\">\u00a9Viajante87<\/figcaption><\/figure>\n<p><em>Elite Traveler <\/em>drinks columnist <a href=\"https:\/\/www.instagram.com\/alicelascelles\/\" target=\"_blank\" rel=\"noreferrer noopener\">Alice Lascelles<\/a> swears by <a href=\"https:\/\/www.amazon.co.uk\/Two-Keys-Grapefruit-Cocktail-Ingredients\/dp\/B07Y8MC88N\/ref=asc_df_B07Y8MC88N?\" target=\"_blank\" rel=\"noreferrer noopener\">Two Keys Pink Grapefruit Soda<\/a> when making Palomas at home. \u201cIt is the bomb,\u201d she says. \u201cI never use anything else.\u201d<\/p>\n<p>At <a href=\"https:\/\/www.losmochis.co.uk\/\" target=\"_blank\" rel=\"noreferrer noopener\">Los Mochis<\/a>, the Mexican-Japanese restaurant with locations in the City and Notting Hill, the house Paloma has developed a loyal following, including <a href=\"https:\/\/www.instagram.com\/worldoffinespirits\/\"><em>World of Fine Spirits<\/em> <\/a>editor-in-chief Alex Martin.<\/p>\n<p>The team makes its own grapefruit cordial by blending grapefruit peel with sugar and citric acid, creating a brighter, sharper citrus profile. The drink is then lengthened with <a href=\"https:\/\/www.amazon.co.uk\/Wavelength-Drinks-Non-Alcoholic-Alcohol-free-Bittersweet\/dp\/B0CLDMFQHW\" target=\"_blank\" rel=\"noreferrer noopener\">Wavelength Ruby<\/a> \u2013 a non-alcoholic grapefruit kombucha \u2013 before being topped with <a href=\"https:\/\/www.thewhiskyexchange.com\/p\/38252\/three-cents-pink-grapefruit-soda-case-of-24x20cl-bottles?\" target=\"_blank\" rel=\"noreferrer noopener\">Three Cents grapefruit soda<\/a>.<\/p>\n<p>The group\u2019s Paloma obsession extends to <a href=\"https:\/\/www.viajantebar.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Viajante87<\/a> in Notting Hill, its underground bar where Latin American ingredients and techniques shape the cocktail list. Both <a href=\"https:\/\/www.instagram.com\/bon_vivantito\/\" target=\"_blank\" rel=\"noreferrer noopener\">Tyler Zielinski<\/a>, co-founder of <a href=\"https:\/\/www.instagram.com\/zeststories\/\" target=\"_blank\" rel=\"noreferrer noopener\">Zest<\/a> and author of <a href=\"https:\/\/www.amazon.co.uk\/Tiny-Cocktails-Miniature-Mixology-Cocktail\/dp\/0593796918\/ref=asc_df_0593796918?\" target=\"_blank\" rel=\"noreferrer noopener\"><em>Tiny Cocktails?<\/em><\/a><em>,<\/em> and spirits writer and judge <a href=\"https:\/\/www.instagram.com\/millie_milliken\/\" target=\"_blank\" rel=\"noreferrer noopener\">Millie Milliken<\/a> credited the venue as their favorite place in London to try the cocktail.<\/p>\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/elitetraveler.com\/wp-content\/uploads\/sites\/8\/2026\/05\/best-paloma-london-paloma-month-2048x2560.jpg\" alt=\"best paloma london paloma month\" class=\"wp-image-260978\" \/><figcaption class=\"wp-element-caption\">\u00a9Paloma Month UK<\/figcaption><\/figure>\n<p>The winning drink, according to the experts, is the bar\u2019s Coffee Paloma, one of the city\u2019s more interesting takes on the classic. Milliken praises the addition of bitter grapefruit cordial and coffee to the usual mix of silver tequila and grapefruit soda, which gives the cocktail \u201cmore robustness and edge.\u201d<\/p>\n<p>Zielinski\u2019s favorite is an off-menu version, made with fluffy grapefruit juice, creating what he describes as a silky, airy texture. \u201cIt was a subtle twist on the classic, but perfectly balanced, moreish, and quite impressive given its simplicity.\u201d<\/p>\n<p>For drinks writer <a href=\"https:\/\/www.instagram.com\/douglasblyde\/\" target=\"_blank\" rel=\"noreferrer noopener\">Douglas Blyde<\/a>, meanwhile, the best Paloma in London can be found in Mayfair, at <a href=\"https:\/\/www.roccofortehotels.com\/hotels-and-resorts\/brown-s-hotel\/dining\/donovan-bar\/\" target=\"_blank\" rel=\"noreferrer noopener\">Donovan Bar,<\/a> inside <a href=\"https:\/\/elitetraveler.com\/suites\/6344\/kipling-suite\" target=\"_blank\" rel=\"noreferrer noopener\">Brown&#8217;s Hotel<\/a>. There, <a href=\"https:\/\/www.instagram.com\/cocktailmaestro\/\" target=\"_blank\" rel=\"noreferrer noopener\">Salvatore Calabrese<\/a> and head bartender <a href=\"https:\/\/www.instagram.com\/federicopavan__\/\" target=\"_blank\" rel=\"noreferrer noopener\">Federico Pavan<\/a> mix Casamigos tequila with agave and fresh lime before topping it with grapefruit soda over ice.<\/p>\n<p>What makes it stand out? Blyde credits Pavan\u2019s precision. \u201cThe pour is exact, the dilution judged rather than left to chance, the ice doing its work without hurry.
